Years ago, a great sommelier told me that the wine cellar of a restaurant can be considered interesting when in the wine list is possible to find different years of the same wine. Well, after 16 years our wine list is starting to become interesting.
We propose vineyards that are a niche of the wine market of the Marche region, are vineyards that have our same philosophy. Therefore, the focus is not in the quantity, but rather in the quality at a fair price. We prefer companies that work with high quality organic or biodynamic products, thus operating with respect and love for the territory.
All the vineyards that work with us follow the traditional method to harvest the grapes: solely by hand and without the use of any machinery. In this way all the grapes remain undamaged and retain those properties that will guarantee a great wine. Also the use of sulfites is limited to the strictly necessary amounts, usually way under the law limits.
Our wine cellar is perfect for both vertical and horizontal tasting experiences of the great majority of the wines in our list; in addition, all the wines are purchasable to take away with winery prices.
